What’s Cooking?…Flax Seed Crackers

If you are looking for a healthful, nutritious, tasty and satisfying substitute for commercial crackers or bread, maybe this is it?  It’s a bit boring to eat seeds, but as a way of increasing the seeds in ones diet, well this is easy and would also make a stunning addition to any cheese and fruit platter.

Ingredients

1 cup of ground or whole Flax seeds
1 cup water
2 tablespoons white Chia seeds
2 tablespoons sesame seeds
2 tablespoons pumpkin seeds
2 tablespoons sunflower seeds
For Rosemary and Salt Version add..
2 Teaspoons Ground Rosemary
1-2 Teaspoons Iodised Sea Salt

Method

Set the oven to 150 degrees Celsius.  Put the ground flax seeds into a bowl and cover with the water. Mix to a slurry and allow to stand for several minutes.

Add the rest of the seeds and mix well.

Prepare 2 large flat baking trays with baking paper.  Spread the mixture carefully onto the trays.   Put a piece of cling wrap on top of the mixture. Use your clean hands to press the mixture. Make as thin as possible.  Remove the cling wrap.  Allow to stand for 30 minutes before baking.

Place in the oven for about 30 minutes.

Remove from the oven. Turn over and return to the oven for about 20 minutes to dry out the underside. Remove and cool. Break into irregular pieces. Use as a snack for anytime or as a substitute for bread or crackers with a favorite cheese, spread or dip or with fresh or dried fruit.

Please note. If you do not have ground flaxseeds you can substitute whole flaxseeds but double the soaking time. 😀
