What’s Cooking?…Pork Spare Ribs Ragout Slow Cooked

Hello Everyone!  Pork Spare Ribs.  Probably we normally think of as being barbecued or baked for a delicious dish.  However, they can be slow cooked.    Barbecuing is not necessarily always  available or doable for everyone.  Also it does require more last minute preparation to make the meal come together.

Today I’m sharing with you a very easy, but terribly delicious Pork Spare Rib recipe which means you can be cool calm and collected at serving out time, because all the prep work was done earlier, and all you have to do is serve it out.

This dish is easy enough to serve as a weeknight dinner, but good enough to be a dinner party delight!

Following the style of an Italian Ragout, this meal is cooked in a tomato based sauce which ideally complements the ribs.

This is how I do it.

Ingredients

1 tablespoon olive oil
1.2 kg Pork Spare Ribs
2 large brown onions
2 1/2 cups of pizza/pasta sauce or equivalent – see link

 

Method

Turn on your slow cooker.
Put the olive oil into a frypan on medium to high heat.  Brown the ribs 2 or 3 at a time.  Add to the slow cooker.

Peel and slice the onions.  Fry gently after the ribs and add to the slow cooker.
Use the pizza/pasta sauce to deglaze the pan.  Bring up to a simmer, then add to the slow cooker.

Cook for 4 hours on high or 7-8 hours on low.
Serve with your favorite pasta, I used Casarecce Siciliane and greens of your choice (I used fresh sautéed spinach)  or a salad.
